The party begins in the luminous décor of the Midi-Minuit bar. Amid the structured light of Arik Levy’s Futur Deco chandeliers, composed of ten tiers of crystal tiles, and the parchment panels of decorator Jean-Michel Frank (1926), Margot Lecarpentier’s creations diffuse their own unique light.

Graduated in intellectual property law in Paris, Margot Lecarpentier developed a passion for spirits and liquid mixing during a trip to NYC. Upon returning from the USA, she left her legal career behind and dove into mixology. Always in search of excellence, she honed her skills at the Experimental Cocktail Group, a pioneer in the Parisian cocktail scene, and trained with a highly demanding international clientele. In June 2017, she opened her bar in Belleville, Combat, which embodies a blend of an old-fashioned, whimsical Paris and the rigor of liquid expertise—an unexpected and avant-garde venture.

One evening in 2022, Alain Ducasse, a connoisseur of taste, stepped into the Combat bar in the 19th arrondissement. Margot Lecarpentier shared her cocktail journey with him; after a few Negronis and a signature Impécâpre cocktail, their affinity became evident. “Despite everything that separates us, we share the same tastes: less sugar, more acidity, bitterness, and astringency in our creations,” the mixologist confirms. Her drinks are thoughtful and profound, with a certain edge, as for her, cocktails are elevated to the status of liquid gastronomy.

Conceived with the joy and brilliant cheekiness that characterizes the mixologist of the Ducasse Paris group, the cocktails follow the seasons but also the hours that pass throughout the day. She has created a menu where non-alcoholic beverages are just as important as alcoholic recipes, and offers a sober pairing for lunch.

The cocktail bar doubles as an afternoon tearoom, serving champagne, pastries and maison creations. Whether spending a day, an evening or just a moment before treating themselves, mixology enthusiasts enter a parallel world where what they drink is designed according to the container. As if echoing the precise gestures of Baccarat’s glass cutters, Margot Lecarpentier cuts the ice Japanese-style. With the play of colors created by the ingredients, the shape of the ice and the glasses, the cocktail becomes a prism through which light and sensations are enhanced.
