The chefs
A creative trio
A meal conceived by three generations of chefs: Alain Ducasse, Christophe Saintagne and Robin Schroeder.
Together, they embody the idea of transmission. Unsurprisingly, the elder has passed on his DNA to the two younger chefs. While Christophe Saintagne provides his former mentor with an unconventional view of his cooking and an ability to let go, he passes on his rigor and sense of whimsy to the thirty-something Robin Schroeder. The youngest, for his part, brings his freshness, ambition and unwavering energy to the project.
This triangulation gives rise to a unique experience that awakens the imagination, like the eggplant cooked in a fig leaf on the bar. Concentrated with subtlety, its melt-in-the-mouth, summer-infused flesh suddenly transports you to the shores of the Mediterranean, in the shade of a fig tree.
The experience
A cuisine of precise technique, in perfect light
Dinner begins in the elegant setting of the Midi-Minuit bar, with a cocktail by Margot Lecarpentier and the first four bites of a meal conceived by the three chefs.
At the table, nothing is static, everything is in motion. The menu’s construction has no common narrative; it is composed of dishes that complement, react to and collide with one another. A squash flavored with coffee transports you to a burner factory where roasting is in full swing. Shredded lobster in a rose tapioca bath makes you feel like Cleopatra in a donkey milk bath. A sea bream/cedar/fennel whips the palate and resets the taste buds before moving on to the wildest incongruities.
Designed by Aliénor Béchu and her teams at Volume ABC, the room is a cabinet of curiosities in itself. On the walls, raw oak screens by sculptor Jean-Guillaume Mathiaut contrast with the rainy sky: a blend of the fresco originally painted on the ceilings and the unusually large blown crystal drops, imagined by the interior designer and specially crafted by Baccarat artisans. Bathed in light, they cast shadows on the floor and tables, where a play of reflections add vitality to the food.
